How to make it
- Verify both products’ labels and dietary information.
- Fill the wine glass with fresh ice.
- Measure the sparkling grape drink, aperitif and soda; lift gently.
- Add orange and describe the selected ingredients.
Why it works: The familiar spritz structure works only if the bitterness and sweetness of the actual products are balanced.
Common mistakes, useful fixes
Too sweet
trial different products before altering service measures.
Trace alcohol overlooked
check labels, not category names.
Flat
open sparkling products close to service.
Serving the guest
What to tell the guest
We use these two products labelled 0.0%; I can show you the labels.
Dietary and product checks
Check sulphites and other declared ingredients in grape drinks and aperitifs. “Alcohol-free” terminology varies; communicate the actual labelled ABV.
Variations
- Different aperitif brands need a recorded tasting trial.
- A soda-only longer version is a separate measured adaptation.
About this house drink
Origin: Original course adaptation of the spritz family; no historical invention claim. (Original house recipe)
An alcohol-free spritz needs a product specification, not simply an orange colour. This house recipe combines a labelled 0.0% bitter aperitif, a labelled 0.0% sparkling grape drink and soda. Products in these categories vary widely in bitterness, sweetness and stated alcohol content, so the recipe remains a development specification until the exact products are selected and tasted together. Its relationship to the spritz is structural: bitter flavour, sparkling length and an orange aroma. Explain those ingredients clearly instead of claiming it tastes identical to Aperol or Champagne.
